So I think Old Man Winter is trying to sweep into town right now. We’ve been fortunate so far, and haven’t had any of the white stuff hit the ground in town. But if the weatherman is to be believed … it’s coming. So today I’ve got an awesome recipe for you to make to help keep you warm and cozy! It’s a family favourite, and believe it or not, it’s great any time of year – it’s my best ever easy slow cooker chili.
On cold, rainy (or snowy) days, a nice big pot of slow cooker chili is something we often throw together. Best because it’s quick and easy and Best EVER because there are always leftovers. I absolutely love a good recipe that’s going to make lots for dinner, some for lunch and maybe even another dinner. It’s just practical. It’s just as fantastic in the summer because you can make a big pot for a family barbecue, or get it ready for camping. I remember when we were kids, and my parents took us camping, my mom would always have a big pot of chili for the first night since they were busy setting up camp, and making a big dinner was just extra work.
A Healthy AND Easy Recipe
This easy slow cooker chili also fits well into our lifestyle. I’m working hard at finding easy recipes that offer the opportunity to use healthy and whole foods. Chili fits this bill perfectly. With just five ingredients, plus a home-made chili seasoning, this quick and easy to make meal will fit your health (and budget) needs! Plus – extra easy points because you can brown the meat AND simmer the chili using your Instant Pot (this Instant Pot DUO is the exact model that I use). Love that Instant Pot!!
I started out by browning a package of ground beef from Costco – WAAAAAY too much for one batch of chili. I divided it into thirds, once it was cooked, with one third for today’s chili recipe, and the other two thirds into their own containers and into the freezer. It’s so much easier to use frozen ground beef if it’s already cooked. I just pop it into the frying pan once it’s mostly defrosted, season to fit the meal, and voila – nearly instant dinner.
ANYWAY – Add all the ingredients to the Instant Pot, give it a quick stir, and let it go. I normally cook it on medium (instant pot setting) for 3.5 hours. Mainly because that’s how long my breadmaker needs to make a delicious loaf of bread to go along with this cozy dish. You could easily let this simmer on low all day while you are at work, or on high for a shorter time. Keep in mind, the longer it simmers, the richer the flavours!
So what are the five ingredients? Easiest ever! All you need is ground beef, tomato sauce, tomatoes (fresh or canned), kidney beans and chili seasoning. I make my own seasoning – the recipe is right here. That’s it!! I know, right? You’re welcome. Of course, you can always add more ingredients if you like, but I love a good, simple meal. We sprinkle some sharp cheddar cheese on top, and yum!
Over this past Summer, we celebrated our daughter’s 20th birthday with a cookout at my sister’s home. The request from the birthday girl was hotdogs and chili. Yes please! I whipped up a big batch of chili, bought some wieners and voila – chili dogs! Sounds good to me. For that batch, I simply used a full package of the Costco ground beef, and tripled the other ingredients. It cooked up just as nicely as the smaller batch and my instant pot was large enough to handle it. WIN! I had a few extra toppings ready to go as well, such as chopped white onion, diced green onion, bacon bits and of course the sharp Cheddar. This was certainly the easiest birthday party I’ve prepared for her yet!
- 1 pound lean ground beef
- 1 can tomato sauce (14 ounce)
- 1 cup chopped tomatoes - fresh or canned
- 1 can kidney beans (19 ounce)
- 1 tbsp chili seasoning
- Brown ground beef.
- Combine cooked ground beef with all ingredients in crockpot or slow cooker.
- Allow to simmer in the slow cooker for several hours to allow flavours to meld and for the chili to reach the desired consistency.
- Top with garnish and enjoy!

Keep in mind, this chili freezes exceptionally well, so you could make a big batch and fill your freezer for those nights when you just don’t have the time (or desire) to cook from scratch.
