IT’S BARBECUE SEASON ONCE AGAIN, AND NOTHING GOES BETTER WITH AN OUTDOOR MEAL THAN A DELICIOUS NO BAKE SUMMER DESSERT! THIS QUICK AND EASY RECIPE WILL BE A HIT WITH THE WHOLE CROWD!
Finally, Summer is upon us and we’re getting ready to get outside and barbecue! Of course, we’ll also be hosting family and friends for a housewarming in our new home and I’ll be making some of my favourite recipes, including this amazing no bake summer dessert.
Naturally, I’ll also be serving my favourite easy slow cooker chili, which makes it really easy to feed a crowd with little effort. And our guests will be finishing up their meals with this awesomely light dessert.
Honestly, my mom has been making this dessert for years and we’ve always just called it goop. However, given a fairly prominent blog by that name, I thought it best to come up with a name for this delicious dessert. And it is light and fluffy, so let’s go with “Fairy Cloud”, shall we? It just seems to fit. In any event, let’s get to the good stuff – what’s in it!
What I really love about this no-bake dessert is that the ingredients are basically pretty healthy, so you can feel free to indulge without actually indulging, if that makes sense? Fresh fruit, Cool Whip, vanilla yogurt and pudding mix – how do you go wrong? Am I right? And the best part – mini marshmallows! Yes, please!
No Bake Summer Dessert Ingredients
- Strawberries
- Bananas
- Cool Whip (you can choose to use regular, light or fat-free – the result is amazing whichever you choose – just be sure it is NOT frozen when you’re ready to make your Fairy Cloud Dessert)
- Vanilla Yogurt (again, regular or light is fine)
- Vanilla Pudding Mix (a dry box mix)
- Mini marshmallows (either plain white or multicolour is fine)
Putting It Together
Start by cleaning and slicing your strawberries, allowing them to stay chilled in the refrigerator while you prepare the remainder of the dessert. Blend the package of vanilla pudding mix with the yogurt, making it as smooth as possible. There will likely still be a few lumps but these will dissolve into the dessert. Next, you’ll stir in the thawed Cool Whip and mini marshmallows.
At this point, you can either add the strawberries now or you can wait until time to serve dessert and stir them in at that point. I tend to wait until I’m ready to serve dessert, just so the juices from the strawberries don’t bleed into the dish. Don’t slice or add the bananas until time to serve, because they’ll turn mushy and brown and it definitely takes away from the magic of this dessert! Another option is to simply slice the strawberries and bananas into bowls and let everyone help themselves to both, either or none.
The Recipe

Fairy Cloud Dessert
A delicious, light dessert, perfect for summer barbecues and get-togethers!
Ingredients
- 2 cups sliced strawberries, fresh
- 2 medium bananas
- 30 grams fat-free vanilla pudding mix (1 box)
- 4 cups light Cool Whip (1 container)
- 2 cups vanilla yogurt
- 250 grams mini marshmallows (1 bag)
Instructions
- Clean and slice strawberries. Refrigerate until serving time.
- In large bowl, blend vanilla pudding mix with yogurt. Ensure there are no lumps.
- Stir in Cool Whip and marshmallows to the yogurt mixture.
- Refrigerate until serving time.
- At time of serving, slice bananas into mixture and add strawberries. Mix well.
- Serve chilled.

This delicious no bake summer dessert is a super easy, super tasty recipe that everyone will enjoy! It’s so nice and light on a hot summer day and the fresh strawberries give it a really nice flavour. You could even experiment with other fruits – raspberries, blueberries or blackberries would all be excellent complements to this dish.
I would recommend that you avoid any fruit with too much moisture, such as melons because the extra liquid will make the dessert more mushy than fluffy. For another twist, try adding coconut flakes, sliced almonds or chocolate chips – the possibilities are endless!
