How to Make a Simple and Delicious Slow Cooker Chicken Taco Soup

ARE YOU LOOKING FOR AN EASY RECIPE THAT IS HEALTHY, HEARTY AND DELICIOUS?  LOOK NO FURTHER THAN THIS SUPER SIMPLE SLOW COOKER CHICKEN TACO SOUP!

There’s something about the change of season that just screams “SOUP’S ON” to me.  This is exactly the reason I came up with this delicious slow-cooker chicken taco soup.  Simple, nutritious and hearty, this soup will satisfy your need for cozy food!

And I’m pretty sure I’m not the only one!  I don’t know about you, but cooler nights seem to be the perfect time to curl up with a bowl of steaming hot soup and fresh bread, especially in front of the fire!  Of course, bonus points if you can smell it cooking all day long.  

For me, the best part of this meal is the fact that it’s pretty much “set it and forget it”.  There is NO prep at the beginning, other than gathering your ingredients.  Say what?  Yes, it might be the perfect food!

 

 

What You’ll Need for Chicken Taco Soup

I’m a really big fan of dump-and-bake or set-and-forget meals.  And this chicken taco soup fits perfectly into those categories!  What makes this soup so easy?  Well, it’s a fix-and-forget favourite, and it simmers all day in my slow cooker!  It’s full of healthy ingredients and it tastes amazing.  What more could you want?

This recipe calls for chicken breasts (which can be fresh or frozen), corn, black beans, diced tomatoes, salsa, broth and seasonings.  Yeah, that’s it!  I told you – super-easy chicken taco soup!  

As a side note – I am a member of a very well-known weight-loss plan and a bowl of this soup happens to have ZERO points.  Awesome, right?  Do keep in mind, of course, that if you add any garnishes like cheese or tortilla chips, it’s no longer zero points.  But so worth it!

So, you’ll need a slow cooker.  Any slow cooker will do.  I use this one and love it.  Of course, you can also use my other favourite on the slow cooker setting.

 

What You’ll Do

Literally the easiest recipe I’ve made in ages, this soup takes set-and-forget to the next level!  The hardest part, in my opinion, is waiting for it to be ready after smelling it simmer all day.  Start by gathering your ingredients, which are listed below on the printable recipe card.  

A few notes about the ingredients – you can easily use fresh or frozen chicken or corn.  Canned corn is good too.  If you don’t have tomato sauce on hand, you can easily swap it out for tomato soup!  That’s how simple this recipe is.  Also, I use my own homemade chili seasoning.  It’s so simple to make and it is delicious!  You can use regular taco seasoning as well, both are really good.

 

 

Once you have all your ingredients gathered up, put it all into your slow cooker.  I generally start with the chicken and then add everything on top, but you can put the chicken in last if you want.  There are no special prep steps in this recipe.  The most important thing to remember is to make sure the chicken is completely covered.  If you choose to use more than four chicken breasts, you may need to add extra liquid just to make sure the meat is fully submerged.

After all the ingredients are in the slow cooker and mixed well, turn it on low.  If you’re using fresh chicken breasts, you’ll want to let it cook for about 5 hours.  Frozen chicken will take a little longer.

When the time is up, take out one chicken breast to check that it is cooked all the way through.  If the chicken is fully cooked, it’s time to shred the meat.

Using two forks, simply tear at the chicken breast and shred it into bite-size pieces.  I pull out one full chicken breast at a time, shred it and return it to the slow cooker.  Once all the meat is shredded and back in the soup, let it sit for another 15-20 minutes.  This allows the flavour of the soup to really get into each and every bite of chicken!

What to Serve with Chicken Taco Soup

This chick taco soup on its own is a fully satisfying meal.  BUT – serving it with a loaf of freshly baked bread is never a bad idea!  We like to garnish our soup with some shredded cheese and crumbled tortilla chips.  They really add to the whole taco flavour.  You could even put sour cream on if that’s what you like.  And be sure to give your soup the setting it deserves!

Remember that if you have a lot of soup, it freezes really well.  We like to put about four servings in a container when freezing it so that we either have lunch and dinner or two dinners.  If you’re freezing the soup, be sure to let it cool right down before putting the container in the freezer.  And when thawing, just allow it to fully thaw and then reheat it in the microwave or on the stovetop.  There’s no need to put it back into the slow cooker.

A nourishing, hearty and healthy weeknight meal, this Slow Cooker Chicken Taco Soup will satisfy your whole family!

Ingredients

  • Chicken breasts - 4 large (fresh or frozen)
  • Chicken Broth - 2 cups
  • Tomato Sauce - 1 can
  • Diced Tomatoes - 1 can
  • Black Beans - 1 can
  • Frozen Corn - 1 cup 
  • Salsa - 1 jar
  • Chili Seasoning - 1 tbsp 
  • Minced Onion - 1 tbsp 
  • Minced Garlic - 1 tsp 
  • Celery Salt - 1 tsp 

Instructions

  1. Combine all items in the slow cooker, ensure chicken is fully submerged in liquid.
  2. Cook for at least 5 hours on low ( longer if the chicken is frozen).
  3. After approximately 5 hours, remove chicken breasts and ensure they are cooked through.
  4. Shred each chicken breast with forks.
  5. Return the shredded chicken to the slow cooker and allow to cook for another 20-30 minutes before serving. This gives the meat time to take in more flavour.

Notes

This soup freezes very well.

You can add more than 4 chicken breasts for a thicker soup if desired. Ensure that you have enough liquid to cover the meat entirely.

The chicken breasts can be fresh or frozen. You can also use frozen or canned corn.

If you don't have tomato sauce on hand, you can substitute tomato soup.

Garnish with shredded cheese, crumbled tortilla chips or sour cream, as desired.
